What is FMF? Fresh milled flour. If you don’t mind a slightly more dense loaf, want better nutrition from your bread, and desire a buttery mouth-feel and flavor that is nutty, toasted, and out of this world, then FMF may be just what you are looking for.

To create this loaf, we mill hard white and red spring wheat berries as our base flour, then we mill and add your choice of specialty grain for an extra rich, tender, and delicate texture and flavor:

Einkorn: Called the ‘original wheat’, Einkorn is an ancient grain, unchanged from its original species and grown for over 10,000 years. All ancient grains provide better digestibility due to their gluten structure, which is different than modern wheat varieties, making ancient grains much easier to tolerate.

Khorasan: If Einkorn is the ‘original’ wheat, then Khorasan is its bold, golden, buttery, and smooth cousin. Legend has it that it was found in an Egyptian tomb and brought back to the US. Khorasan has 20-30% more protein than modern wheat plus higher levels of vitamin E, selenium, and magnesium.

Spelt: Modern wheat’s slightly older, mellow & sweet cousin, Spelt has a distinct flavor and delicate mouth-feel. It has a lower glycemic index than modern wheat and is rich in manganese, phosphorus, and niacin.

Rye: A hardy grain with a savory side, Rye is the backbone of Northern and Eastern European bread culture with an ‘umami’ quality. Packed with amylase enzymes, it is perfect for sourdough, holding on to moisture to keep bread fresher longer.

We still just use 3 ingredients—flour, water, and salt—but melding a mix of flours allows for a loaf with a signature all its own.
